Tidbits for May

New BasketsBy the end of May, you can expect to be able to rest your backsides while devouring Amy and Lisa Jo's delectable bakery treats. We plan on opening the inside seating within the month. Yay! 


We also have new baskets. As our wonderful African baskets slowly started disappearing, we decided to go with space-saving stackables. They're light and easier to navigate around other shoppers in the tight squeezes between shelves.

Local Profile: Judy Khemchand

Seeds from Green SpaceJudy was born in Trinidad, one of the beautiful, tropical, Caribbean Islands. She and her partner Richard came to Cortes almost 20 years ago. Judy’s interest in gardening grew from a hobby, to food production and landscaping. While growing food for her family and working in many gardens on Cortes, Judy turned her boundless energy to study.

Her increasing knowledge enabled Judy to start and manage a successful “seed saving” and distribution business, offering a wide selection of organically-grown flowers, herbs and vegetable seeds, available locally and online since 2004. You can view her catalogue on her website.

Judy has been providing produce for the Co-op for several years, most notably her “salad mix,” a combination over 12 different seasonally available leafy greens from her large garden in the Manson’s Landing area. Seeds from Green Space

Even as she operates her landscaping company Green Space Designs, caring for many local vegetable gardens and landscapes, Judy has continued with her studies and has become a Certified Horticulturist and is nearing the completion of her Landscape Design courses.

Judy is a strong supporter of the Cortes Natural Food Co-op and is proud to make her seeds and produce available to the Cortes community. She is very grateful for our continued support. 



Recipes for Locavores

Thin-Crust Pizza with Nettle Pesto & Roasted Yams, Asparagus and Chevre 
       (And How a Baking Stone Changed My World)

Makes two 12” pizzas.Nettle


Dough:

1 cup warm water (approx. 115f) 
2 tsp honey
3 tsp active dry yeast
olive oil
1 tsp salt
1 cups whole wheat flour
1 cup (approx.) unbleached white flour


Chopping Nettle

Stinging Nettle Pesto:

lb fresh nettles
6 med garlic cloves
⅔ cup of extra virgin olive oil
1 tsp salt
tsp pepper
a pinch of chili flakes is optional

Toppings:

3 cups yam, chopped into " cubes (no need to peel)
2 cups asparagus, VERY thin sliced at an angle
140g chevre (soft goat’s cheese)
A little extra flour or cornmeal and coarse salt.

Re-reading over this recipe now, even I would be a little overwhelmed by the list of ingredients and stages.

All I can say is this: take the afternoon to find your local nettle patch, revel in the time and precision necessary to harvest these first Spring buds all the while dreaming on the perfect balance of salty dough, sweet roasted yams and spicy wild-crafted pesto topped with creamy chevre. You’ll be glad you took the time. CoreenHow long have you been working at the Co-op?  
I think I began in 2004, working as a clerk and then also on the Board. I went away for 3 years; when I returned, I worked a stocking shift for one summer.

What are your roles at the Co-op? 
Since last November, I've been producing the monthly newsletters and tinkering with the website. 

What do you like most about the Co-op?
That it exists.

What are your other interests or hobbies or work?
I enjoy reading poetry and writing poetry & short fiction. Part of this is about encouraging others in their writing, especially youth. I love long, slow walks in the woods. My other jobs on the island include tutoring, editing, writing, teaching computer tutorials, literacy outreach and offering traditional Thai massage. 

What does your ideal Co-op look like?
If I had never seen our Co-op and I came here for the first time, I would say, "This is it! This is the ideal Co-op." I'm realistic, I know there are areas of growth to come. However, I'm so grateful for all those who have built it up to what it is, who have contributed time, love and sweat to create what we now have. The Co-op offers so many healthy choices. I really don't think I'd be on Cortes if it the Co-op didn't exist.
