Updates from Your Board & Committees

GMO Labelling in the Store by Jenn Nelson

The board has received requests for better labelling of products sold in the Co-op that are either known to contain GMOs or at risk of containing GMOs. We are looking for volunteers to join our new GMO labelling committee. If you would like to be involved in the creation and/or implementation of a labelling system, contact Jenn.

Our members have already been invaluable in contributing ideas, skills, energy and funds toward the purchase and vision of the land. If you would like an easy to way to contribute, we have set up a secure online fundraising page for donations. Your donations will help with the next exciting steps in creating our vision: purchasing the land by securing a mortgage and building a new state-of-the-art waste water treatment system.

Store Happenings

Holiday Decorating Party at the Co-op!
Saturday, December 14th
2:00 - 4:00 pm

Come help us celebrate the season! We'll be decorating the store and the cafe. We'll be hanging lights and ornaments as well as making snowflakes and other decorations. Bring your ideas (and any materials you may need for them). We'll be celebrating with apple juice and other treats, too!

This month, the Co-op Bakery & Espresso Bar will host an open mic on Saturday, December 14th. Come and play or enjoy some live music and poetry! Eat some pizza, dessert or have a coffee! Come at 6:00 p.m. The mic opens up at 7:00 p.m.

Pizza Night: The Cure for Cabin Fever!

This month, enjoy our hot and tasty pizzas on Friday, December 6th and Friday, December 20th. Pre-order by 4pm and pick up after 6pm.

Cheese: $12.00 – feta, mozzarella, and parmesan
Vegetarian: $15.00 – pesto, caramelized onion, red pepper, olives, feta, and mozzarella
Hawaiian: $15.00 – mozzarella, ham, and pineapple

Recipes for Locavores

Pasta with Creamy Pumpkin and Cashew Sauce!
Serves 4-6

This is our vegan version of Mac 'N Cheese. All the creaminess without all the cream. This pasta is decadent with earthy squash, rich cashews and sweet caramelized onions. When these bad boys are in the ring with Mac ‘N Cheese, it’s a tough match! 

1 large onion, sliced into half moons
olive oil for sautéing
340g (just under 1lb) of uncooked penne, farfalle, fusilli or macaroni pasta
1 cup peas, optional

1 cup cooked pumpkin or other dark flesh squash such as butternut or red kuri
½ cup cashews, soaked for a minimum of 2 hours
1 – 1 ½ cups water or vegetable stock
2 tbsp nutritional flake yeast
1 tbsp lemon juice
1 ½ tsp salt
½ tsp pepper
¼ tsp chili-garlic sauce, optional

In a large cast iron frying pan, slowly sauté the onion with a dash of salt in olive oil on medium heat until caramelized.

Cook the pasta according to instructions.

Combine all the ingredients for the sauce in a high-speed blender until completely creamy (adding water to your desired consistency).

Drain the pasta and return to the pot. Add the caramelized onions, sauce and optional peas. Slowly heat to desired serving temperature.

Our fellow Co-op members are waiting for them, especially the new releases. You owe $1.00 per day per DVD for every late day. If you are not sure, ask the staff to check whether it's overdue.
